Peri-Peri Potato Salad with Biltong

Here's a fabulous South African twist on a potato salad that has chopped biltong added into it. Perfect for a Braai side!

Ingredients

 3-4 people
  • 1 kg new potatoes, skins left on, boiled until fork tender
  • 30 g Coopers biltong, chopped finely
  • 4 tbsp sour cream
  • 2 tbsp Nando's Peri Peri sauce
  • 80 g cucumber, chopped finely
  • 3 spring onions, finely chopped
  • 2 handfuls wild rocket leaves
  • A few fresh mint and parsley leaves, chopped
  • Salt and pepper to season

Instructions

 20 mins

1. Simply add all of the ingredients into a large bowl and toss everything together until fully incorporated and coated in the sauce evenly.
2. Cover and refrigerate until ready to eat. Enjoy!
